Cheesy Olive Bread

Computer still sick. Going to the "doctor" this week.

In the meantime, I'll post a recipe that I forgot to take a picture of anyways. Click here to see pictures of the master in action and the final cheesy result.

I really, really liked this recipe. Oh my. My thoughts for next time...this makes a lot of the cheese topping, a lot. I really think you could either halve the recipe or spread it on two french loaves. But if you like loads of ooey-gooeyness, then go for it. I would also maybe cut down on the butter...a whole stick is a ton of butter. But this was delicious.
Olive Cheese Bread

Ingredients
1 loaf French Bread
6 ounces, weight Pimiento-stuffed Green Olives
6 ounces, weight Black Olives
2 stalks Green Onions (scallions)
1 stick Butter, Room Temperature
½ cups Mayonnaise
¾ pounds Monterey Jack Cheese, Grated


Roughly chop both black olives and pimiento-stuffed green olives. Slice green onions into thin pieces.
Combine butter, mayonnaise, cheese, olives and green onions in a mixing bowl. Stir together until thoroughly combined. Spread mixture onto French bread that has been sliced lengthwise. Bake at 325ºF for 25 to 30 minutes or until cheese is melted and browning.
Mixture can also be refrigerated (up to two days) and used as a dip for crackers.

We love this recipe. This is such a fun thing to make when having company. My kids all request it to go with their birthday suppers, lol. Have you tried her restaurant salsa, mac n cheese, or asian noodle salad? Those are all favorite stand-bys around our house.
