Maple Bacon Brown Sugar Scones

I made these for a girls getaway this past weekend. The bacon biscuit bake was so stinkin' good, I was excited to find this make-ahead scone recipe that brought many of the same flavors together. I really liked these and would definitely make them again. I left some at home for J and he loved them. But, I could probably cover a tire in bacon and he'd love it.



Maple Bacon Brown Sugar Scones

Maple Bacon Brown Sugar Scones
3 1/4 cups flour
1/3 cup brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cups cold butter
1 cup buttermilk
1 teaspoon vanilla
5 strips cooked bacon, crumbled (I suggest cinnamon sugared bacon, see recipe below) I just made a pound
course sugar for sprinkling
Preheat oven to 425.
In large bowl combine dry ingredients. Cut in butter until it forms coarse crumbs. Stir in buttermilk and vanilla. Fold in bacon crumbles (the original recipe suggests 5 strips worth - I did more...just put in whatever amount you like). Turn onto a lightly floured surface and knead gently.
Divide in half and pat into 7 inch round circles. Brush with melted butter and sprinkle with coarse sugar. Cut into wedges.  I crumbed some extra bacon over the top of each scone.
Bake at 425 for 12-14 minutes. Top with maple glaze.


Maple Glaze
1 1/2 tablespoons maple syrup
approximately 1 teaspoon of maple extract
1/4 teaspoon vanilla extract
drop of water
1 cup powdered sugar
Combine syrup, extracts and powdered sugar and stir until combined. Based on the consistency of the glaze, add water one drop at a time and stir – if you accidentally add too much, just add a bit more powdered sugar. Continue to stir until desired consistency is reached. Pour over scones!

Cinnamon Sugared Bacon

8 slices applewood smoked bacon
3 tablespoons brown sugar
1/2 teaspoon cinnamon
Preheat oven to 375 degrees. Lay a wire rack on top of a baking sheet.
On a large plate, mix sugar and cinnamon. Dredge bacon slices through the mix, lightly patting the sugar on top. Lay strips on wire rack and bake for 20-25 minutes, flipping the bacon once. Remove and drain on paper towels for 1 minute.

I made the bacon biscuits a few weeks ago and the "boyz" LOVED them!! I keep meaning to post that recipe. Hope you had fun on your girls weekend! Thanks for the recipe.
