Anyways, this was really good. It was packed with flavor. In my opinion, the flavor big guns here were the toasted sesame oil (about $4 in the Asian section of a regular grocery store...make sure it's toasted, which you'll be able to tell by the dark color), and the orange marmalade. Very nice combo of flavors. Anybody up for giving this a try?
Pork Chops with Orange Soy Glaze
Salt and freshly ground black pepper
1 tablespoon peanut oil (I didn't have...just used olive oil)
1 cup orange marmalade 1/2 cup reduced-sodium chicken broth
2 tablespoons reduced-sodium soy sauce
1 teaspoon sesame oil
12 ounces udon noodles, cooked according to package directions (used linguini instead)
2 tablespoons chopped scallions
1 tablespoon peanut oil (I didn't have...just used olive oil)

12 ounces udon noodles, cooked according to package directions (used linguini instead)
2 tablespoons chopped scallions
Heat peanut oil in a large skillet over medium-high heat. Season both sides of pork with salt and black pepper. Add pork to the skillet and cook 2 minutes per side, until golden brown.
In a medium bowl, using a spoon, combine orange marmalade, broth, soy sauce, and sesame oil. Mix well and add to the pork in the pan. Bring to a simmer for 5 minutes, or until pork is cooked through and sauce thickens and reduces. Arrange noodles on a serving platter. Top with pork chops and sauce. Garnish with scallions just before serving.
My Notes: I used Smuckers Low Sugar orange marmalade. I also dry toasted some sesame seeds (just pour them, with nothing else, into a saute pan and toast until golden) and sprinkled them over the pork and the side of broccoli. I couldn't find udon noodles, so I used linguini instead and sprinkled a little bit of rice vinegar (also in the Asian aisle) on them.
