Toffee

I've taken an unplanned blogging hiatus as we've been busy with Christmas, J off of work, and family in town - but those are the best reasons of all!

I meant to post some of my Christmas goodie recipes before the holidays...but better late than never. This one is soooo easy and really good - I'm sure many of you have seen a version of this before. I'll definitely do this again next year!




Saltine Toffee
adapted from a few recipes...

Approximately one sleeve saltine crackers
1 cup butter
1 cup brown sugar
2 cups semisweet chocolate chips
3/4 cup chopped pecans/nuts of your choice (I used almonds)
Directions
Preheat oven to 400 degrees F (205 degrees C).
Line cookie sheet with saltine crackers in single layer.
In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread to cover crackers completely.
Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

We call it "cracker candy", or sometimes just "crack", since that's what it ends up being. Totally addictive.
